Using locally grown Oseto rice grown in the terraced rice fields of Shodoshima with a low polishing ratio of 88%, they practice sake brewing that maximizes the original individuality and umami of rice. Normally, sake is considered higher grade the higher the polishing ratio (more polished), but this brand utilizes the nutrients and umami components contained in the outer layer of rice by low polishing (leaving 88%).
