Shodoshima Shuzo is the only brewery in Shodoshima, established in 2005 (Heisei 17), conducting rare island brewing nationwide.
Yoshinori Ikeda, the 4th generation brewer of Ikeda Shuzo (Takamatsu City) founded in 1872, opened this new brewery in Shodoshima in cooperation with Yukihiro Morikuni after closing his business, inheriting the tradition of sake brewing with a long history in the new land of Shodoshima.
For brewing water, they use clear spring water from near the summit of Kankakei, Mt. Hoshigajo (altitude 817m, the highest mountain in the Seto Inland Sea). This famous water gives island-brewed sake a unique clarity and depth.
Using high-quality sake rice from the Seto Inland Sea coastal area, especially locally grown Oseto grown in the terraced rice fields of Shodoshima, it is characterized by a complex taste that makes the most of the color and rich umami with all-volume non-filtration.
For brands, they adopt creative names such as 'Fufufu.', 'Fuwafuwa.', 'Utouto.', 'Bibibi.' that express the drinker's mood, expressing playfulness and friendliness.
Attached to the brewery are a cafe & bar, gallery, shop, and bakery, playing an important role as a tourist resource for the island as a base for transmitting sake culture in a multifaceted way.
It is a unique brewery that Kagawa Prefecture is proud of, practicing sake brewing that fuses tradition and innovation in the unique environment of an island.
