Akebono Shuzo, founded in 1904, is a brewery in Aizu Bangemachi rooted in the rich land, brewing innovation and sincerity. It began when the founder Koshiro Suzuki, once a head clerk at a miso warehouse, became independent to draw out the excellence of the rice grown by tenant farmers.
Currently led by 5th-gen Akemi Suzuki and 6th-gen TOJI-to-be Koichi, they push forward with family bonds and passion. Their greatest distinction is the pursuit of "Akebono Shuzo identity." Using pure underflow from Aizu Chuo Nyugyo and rare local rice like "Mizuho Kogane" or "Kame-no-O," combined with Fukushima-developed yeasts, they masterfully balance crystal-clear fruity aromas with powerful umami reflecting the rice's vitality.
The flagship "Tenmei" shines brilliantly like the light announcing the dawn, while "Issho Seishun" (Always Youth) is a pride marking their decision to abolish the traditional TOJI system and brew by themselves. Additionally, "Kizunamai," brewed with "rice from all 47 prefectures" to connect Japan after the earthquake, achieved the historic feat of winning an award at the National New Sake Awards. Loving tradition while constantly challenging limits, they are a brewery illuminating the future of Aizu.
