Hamashima Shuzo is a brewery located in Ogata Town, Bungo-Ono City, Oita Prefecture, whose house name "Takakiya" originates from the auspicious event of a hawk descending during a ridgepole-raising ceremony.
The brewery earned high acclaim early on, winning top honors at the Kyushu Sake Competition and receiving the "Kintaka" brand name from Kinichi Nojiro, revered as the god of the sake-brewing world.
After a period of dormancy, it was revived by fifth-generation owner-brewmaster Hirofumi Hamashima, becoming a pioneer among "revived breweries" in the sake industry.
Guided by the philosophy that "true local sake is made with local rice and water," the brewery cultivates 13 hectares of rice paddies growing Yamada Nishiki, Gin no Sato, Wakamizu, Oita Mitsui, and Hitomebore, practicing "self-cultivation, self-brewing."
Using soft water from the Kuju Mountain Range for brewing and employing entirely handmade production with traditional fune pressing, they maintain small-scale production prioritizing quality over quantity.
Leveraging the rich natural environment of the Ogata region, famous for Harajiri Falls, and its strengths as a traditional agricultural area, this is a brewery practicing transparent sake-making from rice cultivation to brewing.
