Inheriting historical brands such as 'Chuumasa' from the long-established Yoshiya Shuzo (founded in 1751), they follow a path of new sake brewing while protecting that spirit.
The most prominent feature is the use of pure groundwater from the Abe River and a commitment to 'manual work' without cutting corners. By using careful methods that do not rely too much on machinery—such as hand-washing rice, handmade koji, and traditional pressing—they draw out the maximum umami from the rice. Under the passion of founder Yoshimune Hagiwara, they develop unique brands like Tenko and Hagi no Kura, pursuing the 'ultimate food-pairing sake' that gently complements dishes.
