This area is so rich in nature that it is called "Kyoto's Karuizawa," blessed with the pure water of the upper Katsura River and clear air.
A notable feature is the brewing water; unlike Fushimi's soft water, they use "medium-hard water" comparable to Nada's Miyamizu, resulting in a crisp taste like "Otoko-zake" (masculine sake) due to powerful fermentation.
Sake brewed in the severe cold surrounded by Kitayama cedars is fine-grained with a smooth finish, loved as a unique local sake where tradition and terroir come alive.
