Nara Toyosawa Sake Brewery has been dedicated to handmade sake brewing with almost no mechanization since its founding in 1868, and 80% of the sake it produces is occupied by "Specially Designated Sake" which is Junmai sake or higher.
The founder's name was "Toyosawa Gisuke", and this name later became the origin of the limited distribution brand "Gisuke". While cherishing traditional handmade techniques, the sake carefully brewed by small-batch low-temperature fermentation is characterized by a taste that accompanies meals.
The representative brand "Mujohai" was named by Professor Emeritus Takeo Koizumi of Tokyo University of Agriculture in 1995, born from the words "I was thinking of naming it if I could meet an unsurpassed sake".
