In recent years, they have worked on reproducing the traditional manufacturing method "Mizumoto (Bodaimoto)" originating in Nara, reviving the technology of about 800 years ago to the present. It is characterized by a powerful yet profound taste that harmonizes rich umami, complex acidity, and minerality unique to Mizumoto brewing.
This sake, which is packed with the climate and history of Nara, such as using "Yamanokami yeast" related to Omiwa Shrine, goes well with local dishes such as Asuka Nabe and ethnic dishes, allowing you to enjoy a wide range of pairings.
