Nakamoto Sake Brewery is a long-established sake brewery in Nara with a history of nearly 300 years, founded in 1727 (Kyoho 12) in the middle of the Edo period. The brewery is located in a quiet residential area of Ikoma City, in the bosom of the mountains near the northeastern end of the Ikoma mountain range.
The motto since its founding has been "One White, Two Breweries, Three Toji," adhering to the philosophy that sake brewing by Toji and brewers with high-polished raw rice, good breweries and equipment, and excellent skills is the best.
Since 2005, it has become a brewery that carefully brews only pure rice sake, and more than 99% is brewed according to Ginjo standards. Since 1987, they have switched to a brewing brewery only for specific name sake, brewing carefully little by little, and releasing only sake that they can recommend with confidence.
As a notable product, there is a historical brand called "Kinki no Koganeshu 'Nagayao'" restored based on the sake brewing method written on a wooden strip excavated from the ruins of the residence of Nagayao, a powerful person in the Nara period.
