Sasaki Shuzo, founded in 1893, is the only remaining sake brewery in "Rakuchu" (the historical center of Kyoto), Kamigyo-ku.
While Rakuchu once housed hundreds of breweries, urbanization caused a drastic decline, and now this company alone carries that tradition.
Located on the former site of Toyotomi Hideyoshi's "Jurakudai" palace, they use groundwater from the same vein as the famous "Ginmeisui," which Sen no Rikyu is said to have used for tea ceremonies.
To maximize the umami of the rice, they pursue a natural taste by avoiding excessive filtration. In the heart of historic Kyoto, they continue to brew sake that respects tradition while meeting modern needs.
