Ueda Sake Brewery is a long-established brewery with a history of over 400 years in Nara Prefecture, considered one of the birthplaces of sake, since it was founded by the first Sohei Ueda. It has been brewing sake at the foot of Mt. Ikoma in Nara for about 400 years and is the 18th generation since the first Sohei Ueda.
Blessed with the climate and environment backed by Mt. Ikoma, they continue to brew three brands: "Ikoma Hozan," "Seicho," and "Kicho."
Underground water, which is said to be famous water, flows in Ikoma City where the brewery is located, and sake carefully brewed with traditional techniques along with high-quality "Yamada Nishiki" and Nara Prefecture's original sake rice "Tsuyuhakaze" is a one-of-a-kind sake.
They are thoroughly particular about the rice polishing ratio, polishing Daiginjo to 50% and Ginjo sake to 60% to maximize the Ginjo aroma. Toji Isao Ikeda, who inherited the skills of "Modern Master Craftsman" Sadao Yamane, harmonizes them beautifully and brews sake with the motto "Cherishing ancient styles and exploring modern styles."
