Imayotsukasa Shuzo is a long-established brewery founded in 1767, located in 'Nuttari' near Niigata Station. In this place, which once flourished as a 'town of fermentation,' it has spun a history of over 250 years. Since 2006, it has steered toward '100% Junmai brewing,' adhering to sake brewing that believes in the original power of rice without any added alcohol.
The concept of the brewed sake is 'connecting.' It aims to connect people, food and sake, and tradition and modernity with a single drop of sake. In its liquor quality, where the rich body unique to Junmai coexists within the light drinking taste typical of Niigata, it gently nestles at the dining table and richly colors conversation.
