Kazuma Shuzo, established in 1869, is an innovative brewery located in Ushitsu, Noto Town—the gateway to Oku-Noto. With the mission of 'brewing the land of Noto,' they are committed to using 100% Noto-grown ingredients. Originally starting as a soy sauce manufacturer, they switched to sake brewing after discovering that their water source possessed exceptional qualities for the craft.
Their hallmark is the use of one of Japan's softest waters, with a hardness of 0.6. This delicate water maximizes the umami of rice grown in partnership with local farmers, creating sakes with an incredibly mellow and gentle mouthfeel. Their international reputation is stellar, having won the Spanish Ambassador's Prize and Top Trophy at the International Wine Challenge (IWC). Leading the future of sake through proactive SDGs initiatives and collaborations with university students, this brewery is a world-class frontrunner representing the resilience and innovation of Noto.
