"Sasaichi Shuzo" is a long-established brewery founded in 1661 (Kanbun 1) as "Hanadaya" and renamed to its current name in 1919.
Located in Sasago-machi, Otsuki City, Yamanashi Prefecture, at the foot of the Sasago Pass, a difficult point on the Koshu Kaido, they use the historic "Gozen-sui" (meltwater from Mt. Fuji), which was chosen as the water carried by Emperor Meiji during his visit to Kyoto, for brewing.
In 2013, they abolished all mass production facilities and returned to traditional handmade methods (koji making and yeast starter process).
They have shifted their focus significantly to "high-quality sake brewing," producing sake with a powerful yet soft taste.
