Today, the 8th-generation owner-master brewer Ryotaro Nakashima, who took over at just 26, leads the craft, blending youthful sensibility with traditional techniques. Their goal is to create 'sake that reveals its presence the more you drink.' Instead of relying on flashy aromas, they pursue a straightforward flavor that draws out the inherent strength of the rice, quietly yet firmly complementing Noto's rich seasonal dishes. They are also actively innovating with products like 'Hanaoboro,' a beautiful pink nigori sake made with red sake yeast.
