Fuji Takasago Shuzo is a historic brewery located on the western side of the Fujisan Hongu Sengen Taisha shrine, a site where one can feel the sacred breath of Mt. Fuji. In 1831, the founder, Shoichi Yamanaka—a merchant from Omi—was drawn to the pristine waters of Mt. Fuji and began brewing here. For over 190 years, the brewery has guarded the flame of tradition near the constituent elements of the Mt. Fuji World Heritage site.
The key to their brewing is the groundwater filtered through Mt. Fuji's basalt layers over decades. Drawn from a 28-meter-deep well, this soft water with a hardness of around 40 gently nurtures the yeast, creating the signature smoothness of the Takasago brand.
A major characteristic is the faithful inheritance of traditional Noto Toji techniques. Through the meticulous 'Yamahai' method, the brewery pursues a profound, deep flavor and a mellow sweetness. Generations of master brewers have received high acclaim both domestically and internationally, passing down world-class skills to the present day.
