"Yasumoto Shuzo" is a long-established brewery founded in 1853, located in Yasuhara-cho, Fukui City. Formerly brewing the official sake "Kokufushi" for the Echizen Matsudaira clan, the 46th generation brewer Takeshi Yasumoto revamped all processes and established the new brand "Hakugakusen."
Using only Fukui sake rice "Gohyakumangoku" and "Gin-no-sato," they were reborn as a Junmai specialty brewery brewing with underground water from the Hakusan vein and original yeast. Under the banner of "Fukui Terroir," they pursue dining sake that combines transparency and umami, expressing the individuality of the land to the fullest.
