Unkai Shuzo is an innovative brewing company that achieved the world's first successful development of buckwheat shochu. Originally founded as Gokase Shuzo, the company later changed its name to Unkai Shuzo. Headquartered in Miyazaki City, it operates four breweries: Gokase, Aya, Takaoka, and Izumi.
Sake brewing takes place at the Aya brewery, nestled in the largest laurel forest in Japan within the UNESCO Biosphere Reserve-designated town of Aya, using Aya spring water—selected as one of Japan's 100 Best Waters—for brewing. This rich natural environment and exceptional water quality underpin the quality of Unkai Shuzo's sake.
Master brewer Tokiichi Matsumoto brings over 50 years of experience and has received the "Contemporary Master Craftsman" title from the Minister of Labour, as well as the Medal with Yellow Ribbon. Through his outstanding skills, the company has won consecutive Gold Awards at the National New Sake Appraisal, earning high acclaim in the sake category despite being primarily a shochu maker.
