Oki Daikichi Honten, founded in 1865, is an innovative venerable brewery in Yabuki Town—one of Japan's three major pioneer lands—that pleasantly shakes the conventional wisdom of sake.
The brewery's history is full of challenges. Despite suffering severe damage with five buildings destroyed in the Great East Japan Earthquake, the fifth-generation Yuta Oki achieved a brilliant recovery. Their path has always been pioneering. About 50 years ago, in an era when the term "Junmai-shu" didn't even exist, the fourth-generation Daikichi released "Mutenka-shu Shizengo" (Additive-free Sake: Natural Village) out of respect for rich nature, becoming a pioneer of pure rice sake.
Another pillar is "Gakki Masamune." Originating from an era when it was highly praised by Prince Asaka and described by court musician Yoshioki Oku as "Both brewing and musical performance are offerings to the gods," this brand was revived with a modern touch by Yuta. Committed to using pesticide-free rice and maximizing the sweetness of koji and the brilliance of yeast, its transparent quality is sweeping the world as a "beautiful harmony like playing a musical instrument." With the soul of the pioneer town Yabuki in heart, they continue to carve out new horizons for sake.
