Takanoi Shuzo, founded in 1748 (Kan'en 1), is a long-established brewery that has spun over 270 years of history in Ojiya City, Niigata. It is known as a pioneer of snow cellar utilization, being the first in Japan to challenge the innovative maturation method of 'Snow Storage' (Yukichu-chozo) in 1987.
Inside the 'Yukikura' (snow cellar), where natural snow from the heavy snowfall area of Ojiya is piled up, a stable environment of 0°C with over 90% humidity is maintained year-round. Sake sleeping in this silence loses the roughness of new sake and is sublimated into an incredibly mellow and profound flavor.
It develops a diverse lineup expressing the terroir unique to snow country, such as 'Takanoi' and 'Koshi no Hatsuume' which protect traditional brewing, and 'Denyu' which values regional bonds. Brewing with sincerity in every drop by harnessing the power of nature has earned deep trust from many sake lovers.
