Tokyo Port Brewery is the only sake brewery located within the 23 wards of Tokyo that has revived a tradition dating back to the Edo period. Its predecessor, Wakamatsuya, began brewing in the Shiba district in 1812. Due to its proximity to the Satsuma Clan residence, it is said to have been a secret meeting place for historical figures like Saigo Takamori and Katsu Kaishu. Although forced to close in 1910, the 7th generation head of the family revived the brewing tradition in 2011, obtaining a full brewing license in 2016 and successfully relaunching after a 105-year hiatus.
Operating as an urban microbrewery in a four-story reinforced concrete building on a compact 73-square-meter plot, the brewery practices innovative sake making using highly purified municipal water from the Arakawa River system. This water is a medium-soft variety similar in quality to the groundwater of Fushimi, Kyoto, and is exceptionally hygienic with minimal iron or manganese, making it ideal for sake production. Committed to 100% Junmai and 100% Genshu (undiluted sake), the brewery uses in-house cultivated yeast and varies the yeast strains, brewing methods, and alcohol content for each tank to express a wide diversity of flavors. Through year-round 'four-season brewing,' they offer a stable supply of fresh sake. Under the concept 'Let's drink the story of Tokyo,' this unique microbrewery captures the essence of the ever-changing metropolis in every bottle.
