Chichibu Kikusui Shuzo is an extremely historic brewery that has been weaving the history of brewing in Chichibu for nearly 400 years since its founding in 1625. Boasting one of the oldest histories in the Kanto region, this brewery inherits ancestral traditions and skills to the present as one of the symbolic presences of Chichibu, which flourished as a shrine town of Chichibu Shrine.
For the brewing water, the soul of brewing, it uses clear underground water from the Tama River system springing from the deep, rich geological layers of the Chichibu mountain range. Maximizing this pure water and the unique cold climate of Chichibu, it has pursued a crisp sake quality with a smooth finish. The flagship brand "Chichibu Kikusui" and the solid lineup named after regional heroes like "Chichibu Taro," "Chichibu Jiro," and "Chichibu Kojiro" all balance rice umami with transparency, valuing the "medium-dry" crispness that lets you drink refreshingly after meals.
In recent years, it has also been loved as a tourist base in Chichibu, and at its kura-style (storehouse style) shop with an attached gallery, you can enjoy its deep flavor along with Chichibu's history and culture. Within a glass where the good old chic of Edo and Chichibu's severe yet pure nature integrate, the pride of craftsmen over four centuries is condensed. It is a proud, prestigious brewery of Chichibu that continues to brew sake that adds color to modern dining tables while respecting tradition.
