Aoki Shuzo

Founded in 1805, Aoki Shuzo is a rare brewery in Aichi Prefecture that brews sake using only "Kuratsuki Kobo" (naturally occurring yeast resident in the brewery) without using any added yeast.
Specializing in the ancient traditional techniques of Kimoto and Yamahai brewing, they carefully brew an extremely small quantity of less than 100 koku (about 10,000 1.8L bottles) per year solely by family hands.
The quality of the sake, woven from subsoil water blessed by the Suzuka Mountains and the Kiso River combined with natural vitality, features a coexistence of a clean finish through complete fermentation and profound umami.
It is the ultimate natural sake, concealing wild power and mystery.
