Kawabata Shuzo, founded in the Koka era at the end of the Edo period in Gyoda City, Saitama Prefecture, is a brewery weaving a history of over 150 years. Rooted in the land of Gyoda, which flourished as a post town of the former Oshi clan, it continues sincere brewing in a historic brewery that retains the atmosphere of the Edo period using Hinoki and Cedar wood luxuriously. This brewery itself is a cultural asset telling Gyoda's rich history.
The maximum commitment is the rich water resources nurtured by the land between the two major rivers, Tone and Arakawa. The clear soft underground water pumped from the well in the brewery gives the sake amazing softness and gentleness. To maximize this water's characteristics, experienced craftsmen perform all processes by careful handwork, persisting in meticulous brewing without relying on mechanization.
The only brand, "Masukawa," is a masterpiece that boasts gold medal history at the National New Sake Awards. Due to small-scale production, the brewed amount each year is sold out mainly at local liquor stores and restaurants, receiving thick support from local people. It is a prestigious brewery that continues to convey regional terroir and history as "fine sake that can only be tasted in the land of Gyoda."
