Sugihara Shuzo is a brewery located in Shimo-iso, Ono-cho, Ibi District, known as the smallest sake brewery in Japan with a production volume of less than 100 koku. Run by the fifth-generation owner who also serves as the master brewer (Toji) in a family management style, it has developed its original sake rice "Ibi no Homare" (Pride of Ibi). It practices unique brewing using brewing water filtered from the subsoil water of the Ibi River and brewery-inhabiting yeast. The representative brand "Ibi" is extremely scarce in circulation, known as a "phantom sake" that is currently one of the hardest to obtain, often selling out on the release day due to its many die-hard fans. "Chiyonohana" is developed focusing on local distribution as a standard brand, gaining high evaluation for its unique brewing despite the small scale.
