"Ibi" is the representative brand of Sugihara Shuzo, named with two meanings: "Ibi" (the place name) and "shooting (aiming for) beautiful sake." Named after "Ibi" in Ono-cho, Ibi District, Gifu Prefecture, where the brewery is located, it features unique brewing using the original sake rice "Ibi no Homare," subsoil water of the Ibi River, and brewery-inhabiting yeast. With extremely limited circulation and many die-hard fans, it often sells out on the release day and is known as a "phantom sake" that is currently the hardest to obtain.
