Sentoku Shuzo is a sake brewery located in Nobeoka City, Miyazaki Prefecture, and is the only brewery in the prefecture that specializes exclusively in seishu (refined sake) production. Situated in southern Kyushu, a region known as the "kingdom of shochu," the brewery has maintained a firm commitment to brewing only sake and has never produced shochu since its founding.
Located near the Ose River of the Gokase River system flowing through Nobeoka City, the brewery uses subterranean water sourced from the pristine streams originating in Takachiho. This water boasts exceptional quality, having once been ranked number one in Japan for water quality, and is a vital element supporting Sentoku's sake character.
The brewery primarily uses Yamada Nishiki rice grown in Takachiho and Miyazaki Prefecture's original rice variety "Hanakagura," securing high-quality brewing rice through partnerships with local contract farmers. Meticulous hand-washing of rice and devotion to traditional brewing methods create Sentoku's distinctive flavor profile.
The brewery has an impressive record of gold medals at the Annual Japan New Sake Awards, demonstrating consistent technical excellence.
