Taiheizakura Shuzo, founded in 1725, is one of Iwaki City's most venerable breweries, once honored as the official purveyor to the Yunagaya domain. Currently led by 9th-gen Masashi Taihei, they pursue the ideal of "sake that melts into daily life and warms the heart," maintaining a community-oriented path.
Their brewing creed is thorough local production for local consumption. They use Iwaki-grown "Yume-no-Ka" and "Tenno-tsubu" rice, and underflow from the Samegawa water system originating in the Abukuma Mountain Range. During the mid-winter, they carefully brew "Moromi" (mash) with Fukushima yeasts and press it slowly using a traditional "Sase-shiki" tank press. This uncompromising "100% tank pressing" produces a soft fullness unique to hand-made sake and a clean aftertaste without off-flavors.
With about 90% of their production consumed within Iwaki City, they are truly the "pride of the hometown." Their cups, including brands named after Iwaki's traditional performing art "Jangara Nenbutsu Dancing," resonate deeply with the local culture and are an irreplaceable treasure supporting Iwaki's food culture.
