"Miyake Hikoemon Shuzo" is a long-established brewery founded in 1718 (Kyoho 3). Located in "Hayase," a fishing port town facing Wakasa Bay, they have continued brewing sake living with the sea for over 300 years. The sake born from mineral-rich well water with strong fermentation power is called "Binan-shu" (Handsome Sake). Through dedicated methods such as pressing all sake in tanks (funa-shibori) and using no charcoal filtration, they create dry sake that is powerful yet refreshing and pairs well with fish dishes.
