Horie Sakaba is a sake brewery with a history of over 250 years, known as the oldest brewery in Yamaguchi Prefecture. Located in Nishiki-cho, Iwakuni City, Yamaguchi Prefecture, which is blessed with a rich natural environment, they brew sake taking advantage of their location near the headwaters of the clear Nishiki River.
Using spring water from the clear Nishiki River as brewing water, they are characterized by brewing that makes the most of the blessings of water selected as one of Japan's 100 Famous Waters. In Japan where soft water is the mainstream, they produce Junmai Daiginjo sake brewed with rare "medium hard water", and continue to protect traditional techniques in an environment surrounded by the Nishiki River, the longest clear stream in the prefecture, and mountains of the 1000-meter class.
In particular, "Mujaku" is highly praised domestically and internationally as a premium long-term aged vintage sake with only about 1,000 bottles distributed worldwide each year. Fusing tradition and innovation, they are challenging to create a new style of sake brewing that can be aged at home for 5 or 10 years.
