The company name is derived from "Take" of the founder Buzaemon Shimizu and "I" (Well) from the well where the underground water of Mt. Yatsugatake springs.
Its main feature is the use of underground water from Mt. Yatsugatake, sourced from "Sanbuichi Yusui" (selected as one of the 100 best waters), and "Flower Yeast" isolated from flowers at Tokyo University of Agriculture.
Two brothers, both graduates of the Department of Brewing and Fermentation at Tokyo University of Agriculture, brew unique handmade sake that makes the most of the differences in rice varieties and flower yeasts, with a small annual production of only 80 koku.
