Aizu Shuzo, founded during the Genroku era (1688–1704), is one of the oldest and most prestigious breweries in Minami-Aizu Town with over 300 years of history.
At the heart of their brewing are the "Dozo" (traditional mudstorehouses) inherited since the Edo period. These spaces, with minimal temperature fluctuation throughout the seasons, serve as the perfect cradle for long-term low-temperature fermentation, nurturing the sake with care. Brewed with mineral-rich soft water pumped 100% from underground and South Aizu rice, their sake is characterized by an extremely mellow and transparent beauty. In addition to their flagship brand "Kinmon Aizu," the contemporary brand "Yamanoi"—which pursues the ultimate in "clean, soft, and easy-to-drink" quality—has captivated fans both in Japan and overseas.
