Hishiya Shuzoten is a brewery located in Kuwagasaki, a port town in Miyako City, with a history of over 150 years founded in the Bakumatsu period. As the only brewery in Miyako City, it supports the sake culture of the Sanriku coastal area. Toji Katsutoshi Tsujimura boasts high technical skills, such as being selected as a "Contemporary Master Craftsman" (Gendai no Meiko).
Using spring water protected for 150 years as brewing water, it features a clear taste without off-flavors. Although it suffered devastating damage with all buildings submerged by the tsunami of the Great East Japan Earthquake, the brewery was rebuilt at the same location, inheriting the sake brewing of Sanriku.
In Miyako, a tourist destination famous for Jodogahama, they continue to brew sake that matches Sanriku seafood, and are characterized by sake quality design that emphasizes compatibility with coastal cuisine.
