Miwa Shuzo, founded in 1716, is a historic brewery located in the mountains of the Chugoku Mountains at an altitude of about 500 meters, naturally the highest elevation in Hiroshima Prefecture.
Taking advantage of the cold climate with an average temperature similar to that of the Tohoku region, it brews sake with a "clean mouthfeel" with little off-flavor by allowing fermentation to proceed gently.
Two types of water are used for brewing: soft water springing from the mountain behind the brewery and medium-hard water pumped from 50 meters underground. By using them properly according to the desired sake quality, a rich flavor is created.
