Kawachi Shuzo (now Shiratake Shuzo Co., Ltd.) was founded in 1919 and is located in Mitsushima-cho, Tsushima City, as the only sake brewery on Tsushima Island. In October 2020, the company name was changed from Kawachi Shuzo Partnership to Shiratake Shuzo Co., Ltd.
The brewing water is drawn from approximately 10 meters underground in Keimei no Mori (Keimei Forest), selected as one of Japan's Top 100 Water Source Forests. This soft water is spring water from Mount Shiratake, promoting gentle fermentation and producing sake with a mild, sweet flavor. The water on Tsushima tends to be soft and requires only minimal filtration to remove impurities, reflecting the brewery's characteristic of crafting sake within Tsushima's natural environment.
The flagship brand Shiratake is named after the sacred Mount Shiratake on Tsushima, designated as a National Natural Monument, and has been beloved by islanders. Shiratake Daiginjo has won consecutive Gold Awards at the National New Sake Competition, and Shiratake Junmai Daiginjo has won a Gold Award at the Fukuoka Regional Taxation Bureau Sake Competition.
As Tsushima's only sake brewery, it continues to preserve the island's traditions and culture.
