Takahashi Shoten is a long-established brewery in Yame City, Fukuoka Prefecture, boasting over 300 years of history since its founding in the 2nd year of Kyoho (1717) in the Edo period. The first generation, Rokuroemon Takahashi, started sake brewing in Yame, a rice-producing region, and they have inherited the technology and spirit for generations.
The representative brand "Shigemasu" was named by combining the character "Shige" from the name of the 10th generation Shigetaro and "Masu" (measure cup), with the wish for "more and more prosperity." They are thoroughly particular about "Koji," the cornerstone of sake brewing, and continue to protect the old-fashioned box koji method.
Using the underground water of the Yabe River for brewing water, they use sake brewing rice such as Yamada Nishiki, Omachi, Gin no Sato, and Yumeikkon from Fukuoka Prefecture properly, practicing sake brewing utilizing local blessings. In addition to sake, they also manufacture shochu "Hakoirimusume" utilizing that technology.
