Hayakawa Shuzo

Located in Komono-cho at the foot of the Suzuka Mountains, this is an extremely small, family-centered brewery.
They use "subsoil water from Mt. Shakagatake" as brewing water, which is ultra-soft water with a hardness of less than 25, even among the Suzuka Mountain range waters.
They maintain thorough quality control without sparing any effort, such as all-pure rice brewing, all-funa shibori (pressing in a traditional wooden tank), and all-bottle storage.
The gentle, enveloping taste that makes use of the softness of the water, brewed by young Master Brewer Toshihito Hayakawa, fascinates many local sake fans.
