Otaki Shuzo

Otaki Shuzo, founded in 1884, is a historic brewery operating in Minuma Ward, Saitama City, where the traces of nature-rich Musashino remain. Using high-quality underground water from the Tone River system pumped from deep underground for brewing water, craftsmen inheriting the skills of traditional Nanbu Toji brew sake with all their hearts.
The characteristics of this brewery's brewing are commitment to handmade and thorough quality control. To maximize the umami of rice, it practices careful koji making and low-temperature long-term fermentation. The resulting sake is highly evaluated as "flavorful dry" having both a sharp dryness and a plump aroma and deep taste.
The flagship brand "Kokonoe Zakura" is loved by many fans for its mellow aroma and flavor that you never get tired of drinking. Also, it develops a lineup rooted in local Saitama, such as the regional limited "Washi Izumi."
