Toshun Shuzo

Founded in 1865, Toshun Shuzo in Moriyama-ku, Nagoya, is a brewery with over 150 years of history.
Its origin has a grand story—starting at the end of the Edo period by obtaining timber originally prepared for building towers of Nagoya Castle to construct their brewery along the Zenkoji Kaido highway.
Using subsoil water from the Kiso River and high-quality sake rice, they specialize in powerful brewing centered on traditional "Yamahai" methods, where rice umami and acidity harmonize.
Their sake quality, which pairs perfectly with Nagoya's rich food culture (such as Miso Nikomi Udon and Miso Katsu), is highly acclaimed not only locally but also at modern tables, including winning the Grand Gold Medal at the Wine Glass Delicious Sake Awards.
