Its origin has a grand story—starting at the end of the Edo period by obtaining timber originally prepared for building towers of Nagoya Castle to construct their brewery along the Zenkoji Kaido highway.
Using subsoil water from the Kiso River and high-quality sake rice, they specialize in powerful brewing centered on traditional "Yamahai" methods, where rice umami and acidity harmonize.
