Nishiumi Sake Brewery is a brewery founded in 1716 (Kyoho 1), inheriting over 300 years of history and traditional sake brewing.
It was named "Soranotsuru" (Crane of the Sky) after the founder, Taheye Nishiumi, had a dream of soaring through the sky on a beautiful crane dancing in the sky.
Using Yamada Nishiki and other sake rice harvested from their own paddy fields near the brewery, they have established an integrated production system where they handle everything from rice cultivation to sake brewing themselves.
Junmai Daiginjo and Daiginjo use 100% Yamada Nishiki, handmade koji, and brewing water called "Teramizu" pumped from a well on the premises, and are fermented slowly at extremely low temperatures.
It is a historic brewery representing Akashi, engaging in sake brewing that thoroughly focuses on quality despite being small-scale.
