Toyosawa Honten is a brewery with a quality-first policy that has been in the sake brewing business since the early Meiji era and moved to Fushimi, Kyoto in 1953 in search of "better water."
They are in one of the few blessed environments where they can use the famous well water "Shiragikusui" (White Chrysanthemum Water), one of Fushimi's seven wells, in its naturally emerging state (brewing with natural water).
They value above all the heart to brew "delicious sake that makes everyone who drinks it feel happy and joyful."
Polishing Kyoto's unique sake rice "Iwai" up to 50% and brewing it with Shiragikusui water, their sake is a masterpiece where the kindness unique to Kyoto's water is conveyed within a sharp Tanrei Karakuchi (dry) mouthfeel.
