Nagayama Honke Sake Brewing is a brewery located in Kurumaji, Ube City, Yamaguchi Prefecture, practicing Junmai sake brewing with the concept of 'healing and rice taste'.
Located upstream of the Koto River flowing in front of the brewery is Akiyoshidai, one of Japan's largest karst plateaus, and they use medium-hard water pumped from underground of the Koto River which originates from Akiyoshidai as preparation water. This medium-hard water, rich in minerals such as calcium, gives the sake transparency while providing a strong tension to the taste.
The 5th generation brewery owner, Takahiro Nagayama, believes that production methods such as added alcohol, sugars, and carbon filtration do not meet international standards, adopting a policy of brewing only all-Junmai sake. After realizing the importance of terroir by visiting wineries in Europe, he conducted sake rice research at the National Tax Agency Brewing Research Institute in Higashi-Hiroshima and released the Junmai Daiginjo 'Domaine Taka' brewed with local Ube-produced Yamada Nishiki.
Owning an agricultural production corporation, they cultivate sake rice such as Yamada Nishiki and Omachi, holding the philosophy that breweries should protect the local environment by actively participating in rice growing. Pursuing the expression of terroir using locally produced sake rice, they create a unique sake quality woven by water and rice derived from the karst plateau of Akiyoshidai.
The representative brand is 'Taka', which receives high praise both domestically and internationally.
