Kobori Shuzoten is a historic brewery established in the Kyoho era (1716-1734) in Tsurugi, Hakusan City, with nearly 300 years of heritage. Tsurugi, located at the foot of the sacred Mount Hakusan, has long flourished as a center of Hakusan worship and is renowned as a premier site for sake brewing, blessed with pristine snowmelt water.
They use underground water from the Hakusan mountain range and carefully selected rice varieties like 'Hokuriku No. 12'—a rare strain used by only two breweries in Japan—as well as Ishikawa's original 'Ishikawa-mon' and 'Hyakumangoku no Shiro.' Their flagship brand, 'Manzairaku,' was named after the auspicious court music (Gagaku) played at celebrations, carrying a wish for the prosperity of its drinkers. Beyond sake, they are world-famous for their 'Kaga Umeshu' (plum wine). It is one of Ishikawa's most prestigious breweries, constantly pursuing the height of quality while honoring its deep-seated traditions.
