Tsukasagiku Shuzo Co., Ltd. is a brewery located in Mima-cho, Mima City, Tokushima Prefecture, founded in 1896 (Meiji 29). It is a brewery named with the ideal of 'rich fragrance of chrysanthemum flowers.'
Mima Town is located in the western part of Tokushima Prefecture and is blessed with rich nature such as Mt. Tsurugi (one of the 100 famous mountains in Japan), Yoshino River (the largest river in Shikoku), and Anabuki River (one of the leading clear streams in Japan). The brewery is located in a place called Kirai, which has continued since the Kamakura period.
Whilst Awa Toji inherits traditional techniques, they are carrying out careful brewing without sparing effort. Carefully selecting only local rice, it continues brewing sticking to Junmai sake as a 'Junmai sake brewery made only with rice and koji.'
Using clear water from the Yoshino River and Anabuki River and rice nurtured by the climate of Awa, the sake brewed with the wholehearted skills of Awa Toji aims to balance tradition and innovation rooted in the region.
