Tanaka Shuzo is a long-established brewery with a history dating back to the Edo period, located in Nagahama, Joetsu City, Niigata. While this region is known for many sweet sakes, Tanaka Shuzo's flagship brand 'Notaka' dares to stick to the 'typical Niigata Tanrei Karakuchi' style and has earned overwhelming support from local sake fans.
For the brewing water, which is the lifeline of sake making, they use soft water springing from a 'lateral well' (Yokoido) dug horizontally into the mountain slope. This pure water is the secret to creating a soft and gentle mouthfeel within the crisp dry taste.
The shipment rate to the local market is extremely high at about 75%, and it has continued to be loved as a 'local sake' deeply rooted in the region. Without resting on its long tradition, it continues to sincerely protect its brewing style that complements meals.
