Yamano Shuzo is a brewery located in Kisabe, Katano City, Osaka, with a history dating back to the late Edo period. Since moving from Senshu to Katano in the early Meiji era, they have maintained their traditions across five generations.
They use pure undercurrent water from the Ikoma Mountains that flows into the Amanogawa river system for brewing, combined with locally grown Yamada Nishiki and contract-grown rice, crafted with the exceptional techniques of the Nanbu Toji.
A major characteristic is their evocative brewing that integrates regional nature and culture, overlaying the "Tanabata Legend" (Orihime and Hikoboshi) of Katano onto their sake.
Their elegant and balanced "Umakuchi" (savory) style evokes the rich terroir and romance of Katano with every sip, and has been cherished as a local pride for many years.
