Using the pure groundwater from the sacred Iide mountain range and high-quality rice nurtured by the fertile soil of Okitama—one of the best rice-producing areas in the prefecture—craftsmen pour their souls into every drop using traditional Nanbu Toji techniques.
While respecting tradition, their willingness to take on new challenges, such as making shochu derived from Junmai sake, continues to convey the pinnacle of "Tanrei Umakuchi" (light and savory) nurtured by the Okitama terroir to the present day.
