From the Kamakura to the Sengoku period, Aburakawa was known as "Ohama" and thrived as the most prosperous port town in the Sotogahama region.
The brewery's flagship brand, "Denshu," literally means "Sake of the Rice Fields." True to its name, it is a 100% Junmai sake made exclusively from rice harvested from fields, with a steadfast commitment to traditional, manual production without any added brewer's alcohol or sugars. At a time when adding alcohol and sugar was the norm, the brewery spent three years perfecting a method to brew without them.
They primarily use high-quality local rice, including Aomori-born varieties like "Hana-fubuki" and "Hana-omoi," as well as "Kojo-nishiki," the prefecture's first sake rice variety which Nishida Shuzoten successfully revived from near extinction.
Their meticulous process includes eliminating activated carbon filtration to preserve freshness and practicing "bottle storage with a single pasteurization" (heating the bottled sake to 65°C) for all varieties except raw sake.
The result is a perfect balance: a robust body that satisfies seasoned sake lovers, yet a fragrant, approachable character that welcomes those new to the world of Japanese sake.
