Sagara Shuzo is a venerable sake brewery in Tochigi City, founded in 1831. Using pure subsoil water from the Nikko mountain range (soft water with a hardness of 33mg/L), it has preserved traditions dating back to the Edo period.
Today, the brewery is led by Sanae Sagara, one of the few young female Toji (Master Brewers) in the northern Kanto region, creating sake with a delicate and transparent profile. With the motto "Wajo Ryoshu" (Good wine is made from the harmony between people), they produce sake with a gentle yet dignified flavor that subtly complements people, cuisine, and the local climate.
From the traditional "Asahisakae" to the revived historic brand "Tosho," this brewery beautifully blends respect for history with passion for the future.
