Nishide Shuzo, established in 1913, is one of the most dramatically storied breweries in Komatsu City. Due to financial difficulties, the brewery was sold to another company in 1996; however, in 2014, Hirohisa Nishide—the heir of the founding family—succeeded in buying back the brewery after 18 years, reviving the Nishide name and the traditional 'Harukokoro' brand.
Today, the brewery is run solely by the four members of the Nishide family, who honor traditional brewing without relying on modern machinery. They prioritize laborious, analog processes such as steaming rice in wooden 'Seiro' vats and pressing sake using the traditional 'Sase-style Fune.' Their core philosophy is 'Symbiosis with Nature.' Using only Ishikawa-grown ingredients and based on 100-year-old 'Kimoto' brewing methods, they pursue authentic flavors by leveraging natural lactic acid bacteria residing in the brewery. This is a 'miracle sake' brewed by family bonds and sheer persistence, where a passion once lost has been breathed back into life.
